NewMoo develops liquid casein for animal-free cheese
Food-tech start-up NewMoo has developed animal-free cheese using plant molecular farming to produce casein proteins, the essential components of traditional dairy products.
This innovation aims to offer a scalable, cost-effective and sustainable alternative to conventional cheese, meeting the growing demand for plant-based foods without compromising on taste and texture.
NewMoo Closely Mimics Traditional Dairy Cheese with Its Line-Up
NewMoo, a food-tech start-up, embraces cheese innovation with plant molecular farming — a method to produce casein proteins from plants, enabling the creation of animal-free cheese that closely mimics traditional dairy cheese. NewMoo expresses casein proteins in plant seeds, allowing for the cultivation of casein-rich plants.
Molecular Farming Startup NewMoo Debuts Liquid Casein from Soybeans for Animal-Free Cheese
Israeli startup NewMoo is using soybean plants to produce casein proteins in liquid form for animal-free cheese applications, with plans to partner with the dairy sector.
As the molecular farming space continues to blossom, NewMoo has launched from stealth mode to debut casein proteins grown in soybean plants, which are turned into liquid form for animal-free cheese production.

NewMoo uses plant molecular farming to produce dairy alternatives
TEL AVIV, ISRAEL — NewMoo, Ltd., an Israel-based food-tech startup, is using plant molecular farming to produce casein proteins to create plant-based cheese and dairy alternatives.
NewMoo was co-founded in 2021 by Daphna Miller and Hod Yanover to offer alternative, dairy-free products. The company said it has raised $7 million in seed funding, led by lool Ventures and Zora Ventures.
Multiple milk proteins grown in a single plant? NewMoo makes liquid casein for animal-free cheese
Another newcomer is joining the molecular farming ranks, but this one is producing multiple dairy proteins – in the form of liquid casein – from a single plant. After three years in stealth mode, ‘it’s the right time’ for NewMoo to emerge, says co-founder and CEO Daphna Miller.
Cheese inside plants: NewMoo formulates liquid casein for cow-free dairy
28 May 2024 — Food tech start-up NewMoo has developed a “hormone-free” liquid casein using plant molecular farming that is naturally free of lactose and cholesterol and mimics the functionality of dairy cheese. The technique is pegged as a cost-effective process that “sets the cow free” from the industrial milk production process and yields a sustainable source of proteins.
